Tal vez los fideos orientales más conocidos en Europa sean los fideos de huevo, también son los más destacados dentro de la cocina asiática y se elaboran con una base de huevo y trigo. Normalmente se presentan en sopas o platos de wok salteados con verduras y carne, aun así, es habitual verlos en platos fríos como ensaladas.
En los últimos años, los fideos Udon han sido los tallarines que más crecimiento han presentado. Son el tipo de fideos más grueso que encontrarás en platos típicos de la cocina oriental y pueden tener forma cuadrada, plana o redonda, además, están hechos con harina de trigo, agua y sal.
Por otro lado, los fideos de arroz son ideales, y como ya hemos dicho los más antiguos, para las personas que no toleran el gluten ya que se elaboran con harina de arroz y agua. Tienen un aspecto más blanquinoso o transparente que el resto de fideos y suelen ser muy finos pero presentan variaciones en su tamaño.
En la cocina procedente de Japón, Indonesia, China, Corea y Taiwán es muy habitual encontrar fideos shirataki, elaborados a partir de una planta llamada Konjak o boniato de elefante. A día de hoy están tomando renombre gracias a su bajo contenido en carbohidratos y calorías, por lo que es un plato que se está introduciendo en muchas dietas de pérdida de peso.
También podemos encontrar los denominados fideos de soja, fideos celofán, fideos de cristal o hilos de soja. Su aspecto es transparente y muy delgado y habitualmente se recurre a ellos para elaborar sopas o para adornar los emplatados. Están elaborados a partir de harina de soja verde.
Los fideos ramen han aumentado su fama debido al “ramen instantáneo” que llegó a los supermercados. Es un tipo de fideo elaborado con trigo y de un color amarillento, normalmente se utilizan para hacer platos de sopa con carne o pescado y verduras.
