Se conoce como un corte de carne de res cocinado directamente en la parrilla. Es originario de España, pero ha llegado a Latinoamérica a conquistar paladares y corazones. Corren los rumores de que el churrasco de las hembras es mucho más sabroso que el de los machos, ¿te animas a probarlo?
El vacío de ternera es un tipo de corte que se saca de la Falda de Vacuno, en la parte lateral, junto a las costillas. Es un corte que proviene de la cultura Argentina, donde es muy utilizado por su sabor en sus clásicas barbacoas y asados, aunque cada vez está más presente en nuestra cocina.
Se caracteriza por su mezcla de carne de cerdo y carne de vacuno.
Es un clásico que triunfa siempre. Se puede acompañar de salsas, verduras y patatas. Este corte contiene las partes óseas de la caja torácica del cerdo doméstico, que se denomina costillas. Se caracteriza por ofrecer una alternancia de hueso y carne que habitualmente se cocinan juntos.
El matambre es una capa de carne que se saca de entre el cuero y el costillar de vacunos. Es una carne plana con grasa en una de las caras. Tiene un sabor intenso y delicioso cuando está bien cocinado. Se pueden hacer entero a la parrilla de leña o carbón, o también se cocina frecuentemente al horno.
